Whiskey is produced from malted and unmalted barley. In fact, this addition of unmalted barley to the mix, and the triple distillation in copper stills, are the elements that make Irish whiskey special and at the same time particularly characteristic. Its personality is commanding as befits such a whiskey with a signature of 12 years of ageing, as it possesses an extraordinary complexity of nose and mouth aromas. Aged in a combination of American Bourbon casks, and Spanish Olorosho Sherry casks.
